Chocolate Chip Cookie Dough Sandwich

The mother of all cookies. That’s this recipe right here. It’s like a cookie-pie with cookie dough for the filling and when all put together it’s like the ultimate cookie dough lovers experience.

We were just talking about how we don’t bake cookies very often. “Just a little boring,” we agreed. Well this mega cookie is no boring cookie. So when we came across it in the little one’s newest baking book Sweet Bake Shop, we decided it was a must to fill our cookie-baking void.

Tip: One of these go a long way. Don’t make more than say, 12. Could be detrimental to your health.

One bite. That’s all I really recommend eating of these in one sitting. And you’re gonna need some milk.

Chocolate Chip Cookie Dough Sandwich

  • Servings: 18 sandwiches

The softest chocolate chip cookie sandwiched between an irresistible cookie dough filling.

Ingredients

For the cookies
  • 1 3/4 cup all-purpose flour
  • 1 1/4 bread flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 1/2 cups semisweet chocolate chips
For the Cookie Dough Filling
  • 2 1/2 cups all-purpose flour
  • Pinch of salt
  • 1 cup unsalted butter, room temperature
  • 1 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 6 tbsp whole milk, room temperature
  • 2 tsp pure vanilla extract
  • 1 1/2 cups semisweet chocolate chips

Directions

First, make the cookies
  1. Preheat the oven to 350 degrees
  2.  In a medium sized bowl, combine the all-purpose flour, bread flour, baking soda, and salt.
  3. In your stand mixer, fitted with the paddle attachment, beat the butter for about 30 seconds, until smooth. Add the brown and granulated sugars and beat on medium speed until fluffy, about two minutes. Add the eggs one at a time, then add the vanilla and beat until combined.
  4. Add the flour mixture, and mix on low speed until it all comes together.
  5. Add the chocolate chips and mix until incorporated.
  6. Form into tablespoon sized balls and place on parchment paper lined baking sheets.
  7. Bake for 10-13 minutes in your pre-heated oven
  8. When edges are starting to brown, and centers are still soft, remove from oven and let cool on baking sheet, then remove to cooling racks and let cool completely. While they are cooling, start on the filling.
Then make the Filling
  1. In a medium bowl, whisk together flour and salt and set aside.
  2. In your stand mixer, fitted with the paddle attachment, beat the butter and brown and granulated sugar together for about two minutes. Add the milk and vanilla then beat on medium speed to combine.
  3. On low speed, add the flour mixture all at once. Once the flour is incorporated, fold in the chocolate chips.
Now put the sandwiches together
  1. Fill a piping bag with your cookie dough.
  2. Turn half your cooled cookies upside down and pipe the dough in the center of the cookie.
  3. Place the remaining cookies right side up, on top of the filling and press down gently, sandwiching the filling between the two cookies.
